Vinification and ageing: grapes are submitted to a soft pressing of whole bunches to obtain the free-run must, under carefully monitored temperature and using selected native yeasts. The vinification and the ageing on the fine lees for 6 months takes place entirely in stainless steel tanks. Before being bottled, the wine is lightly filtered and kept at cellar temperature until considered ready to be marketed.
